I actually cheat, and just buy the pre hardboiled eggs, however for instructions on doing it yourself...
1) Put the eggs in a saucepan, with cold water (doesn't much matter how much water). Starting with cold water is supposed to help prevent eggs from cracking.
2) Adding a half teaspoon of salt is thought to help both with the preventing of cracking and making the eggs easier to peel.
3) With the burner on high, bring the water to a boil with the eggs in it. As soon as the water starts to boil, reduce the heat to low, and let simmer for 1 minute.
4) After a minute, remove the pan from the heat and cover,
5) Let sit for 10-15 minutes.
6) Strain out the hot water from the pan, and fill it with cold water.
7) Let eggs sit and eggs cool down a bit (couple of minutes)
8) Begin peeling the eggs once cool enough to hold. It's easier to peel them under cold running water. You can roll the egg on a flat surface to crack the shell slightly prior to peeling. Start peeling from the thick end of the egg.
Empenada Mix

Preheat oven to 350
1) Chop up Cilantro and place to the side (if you use cilantro)
2) chop up hard boiled eggs (you can chop them up into crumbles or slices)
2b) Put Cilantro, Raisins, and Eggs all to the side
3a) Chop/dice sweet potato and onions
3b) Take all ingredients except sweet potato and onions and mix in a bowl
4) Take sweet potatoes and onions and cook in skillet for about 3-4 minutes on medium heat. Then add meat mixture and cook in skillet on medium / medium high. I typically cover the skillet to maintain the moisture from potatoes and onions since I use lean beef that doesn't have much fat.
5) After mixture is cooked, place into new bowl
6) Add Cilantro (***optional***), Raisins, and chopped hardboiled eggs
6b) If you cut hard boiled eggs into slices you can add them to the empanadas separately.
7) Place Empanada dough onto parchment paper, and stuff meat mixture. Add slices of boiled eggs if you haven't already.
8) Fold dough over and press edges down to secure the mixture inside the shaped dough.
9) You can then press down on the edges with a fork, or roll it
10) Spray top of stuffed empanada with EVOO, or brush with some egg wash, or melted butter.
10) Bake in the oven for 15 minutes
11) Then put on lower rack, and put on broiler on low for about 3-4 minutes (this will brown up the top of the empanadas)
