This is one of the easiest but most delicious dishes to cook, no matter what level of cook you are, this CANNOT GO WRONG !
Preheat the oven to 150 Degrees Celcius
Slice the onions roughly and place in a large roasting tin with half of the Rosemary
Place the lamb shoulder on top of the onions and rosemary
Peel the Garlic cloves
With a sharp knive make incisions in the meat and insert the peeled Garlic cloves
Rub the lamb with the olive oil and add the water to the tin
Place the rest of the rosemary on top of the lamb
Cover the tin with Kitchenfoil making sure it's as airtights as possible
Place the lam in the preheated oven and leave for 6 1/2 hours
There is no need to keep an eye on this and you can easily get on with other things! BONUS
After 6 1/2 hours remove the kitchen foil and turn the temperature of the oven up to 180 degrees for a further 30 minutes
After the cooking time has passed, take out the meat and leave to rest for 15 minutes before serving.
Place the roasting tin with all the juices, onion,and rosemary on the stove. Add the red wine and reduce by half.
Strain the juices and this is your gravy!!
Serve with Roast Potatoes or if you are feeling naughty potato Dauphinoise and veg
