Combine mayonnaise, vinegar, salt, sugar and pepper. Stir in remaining ingredients (If using carrots boil them lightly for 2-5 minutes). Garnish with freshly chopped tomatoes and green onions.Cover; chill.
Makes 5 cups.

Heatherferg 10 months agoVery nice. Did not add any carrot, but used extra celery and halved the mayo. Also added chopped garlic chives. One for my favourite list.

vodka0825 8 years ago1/4 cup to 1/2 a cup of mayonnaise tasted much much better...my advice is to add a bit of mayo at a time and stop when you've reached acquired taste.
vodka0825 8 years agoThis was a really nice version of Potato Salad. I used a cup of carrots instead of celery simply because I prefer them and next time I make this recipe I will use a little less mayo.
