Original recipe makes 6
1 cupReal Mayonnaise
2 tablespoonsVinegar
1 1/2 teaspoonsSalt
1 teaspoonSugar
1/4 teaspoonPepper
4 cupsPotatoes; cooked
1 cupCelery; or Carrots
1/2 cupOnions; chopped
2 Eggs; Hard-cooked, chopped
1 largeTomato
2 mediumGreen onions

Classic Potato Salad Preparation

Combine mayonnaise, vinegar, salt, sugar and pepper. Stir in remaining ingredients (If using carrots boil them lightly for 2-5 minutes). Garnish with freshly chopped tomatoes and green onions.Cover; chill.

Makes 5 cups.

    Very nice. Did not add any carrot, but used extra celery and halved the mayo. Also added chopped garlic chives. One for my favourite list.

    1/4 cup to 1/2 a cup of mayonnaise tasted much much better...my advice is to add a bit of mayo at a time and stop when you've reached acquired taste.

    This was a really nice version of Potato Salad. I used a cup of carrots instead of celery simply because I prefer them and next time I make this recipe I will use a little less mayo.
