Crush clove of garlic
Heat oil in fry pan and add zucchini and garlic
Sauté on high heat for 2-3 minutes
Add salt and continue to cook on medium heat for 4-5 minutes
Take off heat, transfer to bowl and allow to cool
Add yoghurt and mix through
Top with crushed walnuts and serve with main course (goes well with Middle Eastern and Mediterranean food)
