Pearson family sage stuffing recipe - no others allowed!
Put bread in low oven to toast. While bread toasts, melt butter, add onion and celery. Cover and steam until soft, approx. 15 minutes. Pour over bread that has been toasted, then covered with cold water to swell, and pressed until very fluffy. Reserve 5 slices and keep dry. Season bread mixture with sage, salt and pepper, and parsley. Add beaten eggs and mix with forks (or fingers, if you're my sister). If too dry, add some melted butter. If too wet, add toasted bread. Place in large flat pan and cook at 350 for 1 hour.
My sister swears that mixing with your hands is the key to delicious success!
