I mixed and matched recipes to come up with this. You can customize by adding coconut, raisins, chocolate chips, and everything! My boyfriend can't get enough and he hates sweets.
Preheat oven to 350 degrees.
Mix butter and both sugars until smooth; add eggs and vanilla, mix well. Mix flour, baking soda, cinnamon, and salt; add to egg/ sugar mixture; mix until smooth. Add oats, peanut butter, and additional ingredients.
Spoon mixture in blobs onto an ungraded cookie sheet. Bake for 10-12 minutes on middle rack until golden brown. Let cool and enjoy!
****This makes 24 large cookies. Use semi sweet chocolate chips, or reduce sugar and use milk chocolate chips. More sugar can be added for a sweeter cookie. I've tried this with raisins, nuts, coconut, and chocolate chips but the combinations are limitless. The dough freezes well, I roll the leftovers in a log in cling wrap and cut off pieces as I need them.
