This makes enough for 4 calzones or 8 mini calzones. It would be perfect
for the Spinach, Chicken, & Cheese Mini Calzones.
1) Coat a large bowl and a small baking sheet with nonstick spray.
2) Proof water, yeast, and 1/4 teaspoon sugar in a small bowl. Let stand
for 15 minutes, then stir in oil.
3) Blend flour, 1 tablespoon sugar, and salt in a food processor. With the
machine running, slowly add yeast mixture and process until a ball
forms around the blade (no longer than 30 seconds). Gently knead
on a well-floured surface until smooth, then form into a ball.
4) Place dough in prepared bowl, cover with plastic wrap, and let rise 1
hour. Punch dough down, divide, and shape into 4 balls for calzones
(2 for mini calzones).
5) Place on prepared baking sheet, cover, and let rise 30 to 40 minutes
before rolling.
