Suggest a better description1) Pulse almonds in a food processor until finely ground. With the motor running,
drop in the garlic and shallot and pulse until finely chopped. Add butter, zest,
lemon juice, salt, and pepper and process until combined.
2) Preheat the grill.
3) Place a large cast-iron or flameproof skillet on grill rack and cover grill. Let
skillet heat until very hot, 8 to 10 minutes. Add wine and let simmer until wine
is reduced by half, about 5 minutes.
4) Add mussels to skillet, top with dollops of almond butter. Cover grill and cook,
shaking skillet occasionally, until mussels open, about 8 minutes.
5) Toss serrano and parsley with mussels. Transfer to serving bowls. Serve with
rustic bread.
