1. Coarsely chop 1 medium onion
2. Chop 2 Tb parsley
3. Mince 2garlic cloves
Cook the meat
1. Heat a heavy medium skillet over medium heat.Add 1 tsp olive oil, onion & ground beef.
2. Season with salt & pepper.
3.Saute until the meat browns and onion is translucent, about 5 minutes.
4.Remove from the heat, and cool.
Cook the pasta
1. Cook the manicotti in alarge pot of boiling salted water until slightly softened, but still very firmto the bite, about 4-6 minutes.
2. Brush 1 tsp of oil over a large bakingsheet.
3. Using a slotted spoon, transfer the manicotti from the pot to theoiled baking sheet and cool.
Combine the mixture
1. Combine the ricotta,half of the mozzarella (1 1/2 cups), 1/2 cup parmesan, and parsley. Add thegarlic, salt, and pepper to taste and mix.
2. Stir the cooled meat mixture intothe cheese mixture.
Preheat the oven to 350 degrees.
1. Brush the oil overa 13 by 9 inch glass baking dish.
2. Spoon 1 1/2 cups of the marinara sauce over the bottom of the baking dish.
3. Fill the manicotti with the cheese-meat mixture. Arrange the stuffed pasta in a single layer in the baking dish.
4.Spoon the remaining sauce over.
5. Sprinkle the remaining 1 1/2 cups ofmozzarella cheese, then the remaining 1/2 cup of parmesan over the pasta.
6.Dot entire dish with the butter pieces.
7. Bake the pasta uncovered untilheated through and teh sauce bubbles on the sides of the dish, about 30-35minutes.
8. Let the pasta stand 5 minutes and serve.
