Yummy cookies
1. Pre heat oven to 180 degrees. Grease and line two baking trays with baking paper. Using an electric mixer, beat butter , vanilla, brown sugar, caster sugar and egg in a bowl until mixture is smooth an swell combined.
2. Sift flour over butter mixture and using a a larger metal spoon to stir in until just combined . Add cornflakes and choc bits. Mix we'll.
3. Using 1/4 cup mixture per cookie, roll mixture into balls and place on prepared baking trays, make sure they are at least 6 cm apart.
4. Using damp fingertips flatten cookies slightly. Bake for 15minutes. Stand cookies on trays foe 3 minutes. Transfer to a wire rack to cool. Serve.
Mix ingredients real well or your cookies will just be a tray, don't forget the crunch, that really makes it taste great. Margarine is no substitute for butter :)
