stir in eggs, salt and milk and beat with a fork until mixed
pour into large bowl containing flour and stir with fork until just combined
add potatoes cut into 1cm cubes, vegetables and cheese
pour into pan, garnish with sliced tomato or thinly sliced capsicum (optional)
bake at 220 for 20-30 mins tip lightly brown and set in centre
