"Great "comfort food"! I definately used the cream and added carrots to the broth to cook with the onion, celery, and chicken.
I also added rice and peas just before serving- made a great "meal in one".
Will use this again. To make more elegant for guests, will delete rice, peas, and carrots and add rosemary. Sprig of rosemary on top for garnish. " - CathieG

1/4 cFlour
1/4 cOnions; chopped
2 tbButter or margarine
1 cMilk; or cream
3 Chicken breasts
Pepper
3 cChicken broth
1/2 cCelery; chopped
Salt

Cream of Chicken Soup Preparation

Boil chicken, celery & onion till done. Remove chicken & shread meat. Reserve broth. Melt butter in top of double boiler over direct heat. Slowly stir in flour. Stir in broth & milk. I added mixed veggies and O'Brien potatoes. Made it a nice chowder. Very filling and very good. I will definitely make again.

I made this soup as written but then went a bit further and made it a 'chicken pot pie' soup. I added carrots, celery and potatoes (small diced) + peas and made it a nice hearty meal. It's nice having a basic cream of chicken that's not full of salt. Thank you!
