Heat 1" water (salted if desired) to boiling in 3 qt saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Simmer 20-25 minutes or until tender. Meanwhile, mix remaining ingredients in large bowl. Drain potatoes; cool slightly. Peel potatoes if desired. Cut potatoes into 1/4" slices. Stir gently into salad dressing mixture.
