Creamy Sweet Potato Salad
Ingredients
Original recipe makes 14 Servings
| 1 tsSugar |
| 2 tbLemon juice |
| 1 bnFresh spinach |
| 3 Bacon strips; cooked and |
| 3 lbSweet potatoes; cooked; |
| 1/2 cSweet red pepper; OR green |
| 1/2 cGreen onions; sliced |
| 2 cMayonnaise |
| 1 cPeas |
| 1/3 cButtermilk |
| 1 tbDijon mustard |
Creamy Sweet Potato Salad Preparation
1. In a bowl, blend mayonnaise, buttermilk, lemon juice, mustard and sugar until smooth. 2. In a large bowl, combine sweet potatoes, peas, pepper and onions. 3. Pour dressing over all and toss to blend. 4. Chill at least two hours or overnight. TO SERVE: Spoon salad into a large brown lined with spice and and top with bacon.
