This recipe is a nice twist on traditional lasagna. With a taste of potatoes, onion and cheese this makes for a great dinner or side dish.
Preheat oven to 350. Cook lasagna noodles and drain. Make 8 servings of instant mashed potatoes according to the package directions. Sauté onion, garlic and butter. Mix cheeses together. When you have all of that prepared you can start layering your lasagna. (I use a foil pan for easy cleanup.) First spray cooking spray on bottom of your pan. Put 1/4 cup onion mixture in bottom of pan. Following with lasagna noodles. Then layer mashed potatoes, onion mixture, and cheeses. Repeat until pan is full ending with the cheeses on top. Spray foil with cooking spray and cover lasagna. Put into preheated oven for 30 to 45 minutes. Until cheeses melt.
For a bulkier meal you can layer pork, beef, or chicken into your layers. For the vegetarians out there you can layer more veggies like broccoli, cauliflower, and mushrooms. Hope you enjoy and make this recipe your own:)
