Crepes Con Queso
| 1 tsSalt |
| Cilantro for garnish |
| 1/2 cYellow cornmeal |
| 1 cCheddar cheese, shredded |
| 1 cNonfat chicken broth |
| Vegetable cooking spray |
| 1 tbChili powder |
| 1 cFlour |
| 3 lgEggs |
| CREPE FILLING |
Crepes Con Queso Preparation
Position knife blade in food processor; add first 6 ingredients. Process until smooth. Chillat least 2 hours. Coat an 8" nonstick skillet with cooking spray; place over medium heat until hot. In other words, make the crepes. Spoon about 1/2 cup Crepe Filling on half of each crepe; roll uo, and place seam side down in a lightly greased 13 x 9 x2 inch baking dish. Sprinkle crepes evenly with cheese. Bake at 300F for 5 minutes or until cheese melts. Garnish, if desired. Yield: 4 servings Notes: Southern Living said the staff all made copies of this recipe to take home. They didnt want to wait for the cookbook!
