"I used flank steak, tenderized and cut into two inch strips. I layered the onion on the bottom, then the meat and all other remaining ingredients. It has a slight kick, definitely flavorful, but even my two small children with mild taste buds loved it! I will definitely be making this again."

Crock Pot Beef Fajitas Preparation
Cut flank steak into 6 portions to fit into crock pot. In any size crock pot, combine meat, onion, peppers, cilantro, garlic, chili powder, cumin, coriander and salt. Add tomatoes. Cover and cook on low for 8-10 hours (or on high 4-5 hours). Remove meat from crock pot and shred. Return meat to crock pot and stir. To serve fajitas, spread meat mixture on tortillas and add favorite toppings. Toppings: Sour cream, guacamole, shredded cheese, salsa (or use whatever toppings suit you).
