Also subbed Pinot for the sherry and served the soup with the wine. I liked the level of sweetness, but then again some of my favorite onion soup is sweet Maui onion soup so maybe it just reminds me of that." - mrcarlon

Original recipe makes 6
1/4 cCooking Sherry; optional
1 1/2 tsSalt
6 cOnions; thinly sliced
2 tbFlour
1/4 cMargarine
1/4 cSugar
2 qtBeef Bouillon

Crockpot French Onion Soup Preparation

Pour bouillon in crockpot; cover and set on high. Cook onions slowly in large skillet in margarine; cover and let cook for about 15 minutes. Uncover and add salt, sugar and flour. Stir well. Add to stock in crockpot. Cover and cook on low for 6-8 hours. Add sherry anytime during the last 2-3 hours of cooking. NOTE: The sugar aids the browning process. Place a slice of french bread in each serving dish. Place a slice of jack, mozzarella or similar cheese over the bread. Pour hot soup over this combination.     This came out great!!! I read the reviews prior to making it so I used less sugar, that seemed to be the theme of the reviews. The only thing I'll do different is cut the onion thicker so it has that restaurant quality.

    I made this according to the recipe and the comments below with less sugar. I added the sherry. I added a couple of cloves of crushed garlic part way through. I like the idea of the bread and cheese at the bottom of the bowl

    I agree with it being a little too sweet, so i'll just try 2 T. sugar next time. I love my french onion soup with a slice of swiss cheese.

    It turned out to be a little sweet, but not too much. Otherwise, a very good recipe.

    Make sure to let it stay in the crockpot for the entire specified time. I tried to rush it the second time and it didn't come out as good.
