This colorful dish will warm up any cold day. Saffron rice combined with the unique flavor of curry chicken and broccoli
Prepare Mahatma rice per the package instructions.
While that is cooking, dice onions and chicken. Season chicken with salt, pepper, ground coriander, ground cumin, and curry powder. (I do not put amounts each persons taste is different so use as much or as little as you like) Once seasoned cook chicken in deep skillet in olive oil till lightly brown. Add onions and continue to cook. I used pre packaged broccoli and cooked it in the microwave pre instructions. When chicken is completely cooked add the white wine herb broth and make sure to scrape all the delicious brown bits from the bottom of the pan. Remove form heat and add sour cream one tablespoon at a time till blended. (I happen to love the taste of curry so I also put some in my sour cream) Add cooked rice and diced broccoli to the skillet and heat again.
