Sole with a kick...
Soak fillets in coconut milk for 5-10 minutes.
Spray flat baking sheet lightly with cooking oil or Pam and place fillets side by side. Brush sesame oil lightly over the top of the fillets and sprinkle the Thai-coconut spice, covering the fish.
Bake on 400 degrees Celsius for 20 minutes until fish is cooked through.
Serve immediately.
Goes really well with Spicy Edemame & Corn recipe.
