Poached and sliced
Italian Vinaigrette
12 ozChicken breasts without skin
8 Whole lettuce leaves
Sliced, 1/2 garnish
Pieces
3 Stalks green onions --
1/2 Garnish
1 cBasil leaves -- chopped
1/2 cProvolone cheese -- grated,
Milk -- grated
8 ozPlum tomatoes, diced --
Lightly chopped
8 ozSalami, dry wine
4 ozGarbanzo beans, cooked --
1 Head lettuce -- cut in 1/4"
Reserve 1/2 garnish
1 cMozzarella cheese, part skim

From: Edith Russo Date: Sun, 19 May 1996 09:24:33 -0700 Combine garbanzo beans, lettuce, basil, mozzarella, chicken, salami, half the tomatoes, half the provolone and half the green onions. Toss with the Italian Vinaigrette. Divide evenly between 8 lettuce-lined plates. Garnish with the remaining tomatoes, provolone and green onions. Recipe By : Cucina! Cucina!
