Open the cans of beans, corn, and tomatoes and empty into a 5 quart pot or dutch oven, juices included. DO NOT DRAIN!! Place over medium high heat. Empty the packs of dressing and seasoning mix into the pot and stir until incorporated.
If you want a little spice to the soup, chop one of the chipotles and place in the pot along with some of the adobo sauce. If you want a lot of spice, chop all the chipotles and place them and all of the adobo sauce in the pot. *** Gloves come in handy when chopping hot peppers ***
Brown the ground beef and drain any fat. Stir the browned ground beef into the pot.
Bring the soup to a slow boil and reduce heat to low. Let simmer for about 30 minutes. Serve topped with shredded cheese, sour cream, and corn chips.
