Ingredients
| 1 cMolasses | |
| 1 cStrong coffee or rum | |
| 3 1/2 cAll purpose flour | |
| 1 tsEach of: salt; nutmeg, | |
| 1 cStrawberry jam | |
| 1/2 tsCloves | |
| 1 cShortening | |
| 2 lbEach of: raisins; dates, | |
| 1 cGranulated sugar | |
| 8 ozCherries; glazed | |
| 4 EGGS | |
| 8 ozMixed fruit |
Dark Fruit Cake Preparation
Sorry about the responses you received regarding your inquiry, I dont have the recipe in fact never even heard of the bakery but I do have a very good one taken from my Simply Delicious Cooking 2 cookbook, enjoy. Chef K Cream the shortening and sugar, add beaten eggs, molasses and coffee / rum. Mix well. Add spices to flour and add to mixture. Add strawberry jam and fruit last. Divide into two, five pound pans which have been greased and floured. Bake for 3 hours in a preheated oven at 275 - 300 F (150 - 160 C). NOTE: If rum is used instead of coffee allow the fruit to soak in it overnight for a better flavour. Posted to EAT-L Digest by RKalenuik
