Mild Laksa using Valcom Laksa Paste
Place the Laska paste, garlic, ginger, and fish sauce in a bowl and combine. Heat wok with about a tablespoon of oil, add paste mix and fry until it starts to thicken and stick to the pan about 2 minutes on a medium heat. Once thickened add coconut milk and stir. Fill milk can almost to the top with warm water, add stock and cornflour, mix together and add to wok. Add whatever protein you like ( chicken and or prawns works best for me) and veggies you desire and let cook for about 2-3 minutes or until protein is cooked . Add squeeze of lemon or lime and your done!
OPTIONAL:
I'm not a big noodle fan, but if you are, put a clump of vermicelli noodles in each serving bowl and cover with boiled water and leave for about 4 minutes or how ever long the package suggests. While noodles are cooking, your bowls are warming at the same time. When ready drain noodles off and put back in bowl ready to be covered in that creamy Laksa soup. YUM!
If you want to you can garnish with fresh coriander and a boiled egg cut in half. Also maybe some spring onion and red chili without the seeds.

Taste, Taste, Taste, as you go along. If you think it's it needs more of something add it! I like my food salty, if you find it too salty add more water. If it's too spicy add some milk. If you'd like it more creamy use coconut cream instead of milk.
Low carb diet...... skip the noodles.
Low fat diet..... stick to the lite coconut cream.
Low calorie diet..... do both of the above :)
