Diabetic Lemon Meringue Pie
Original recipe makes 6
| 1 1/2 tsCream of tartar; (meringue) |
| 4 pkEqual; (meringue) |
| 1 1/2 cWater |
| 2 Eggs |
| 4 1/2 tsCornstarch |
| 1/3 cLemon juice |
| 4 pkEqual; (or 1T sweetener) |
| 4 Egg whites; (meringue) |
Diabetic Lemon Meringue Pie Preparation
Cook all ingredients in double boiler until thickened. Pour into pie shell. Top with meringue which has been beaten stiff. Bake 450F for 15 minutes or until golden brown.
