Original recipe makes 4
| 2 Garlic; minced |
| 1/2 cCelery; sliced |
| 1/2 cDry white wine |
| 3 tbShallots; minced |
| 1/2 tsGinger |
| 1/2 tsCayenne pepper |
| 1 1-lbchicken breasts, boned and skinned; (To 1 1/2 lbs) |
| 1 tsCurry powder |
| 1/2 cRed pepper; strips |
| 1/2 cYellow pepper; strips |
| 1/2 cChicken broth |
Diet Chicken Preparation
Combine ginger, curry and red pepper and rub on chicken. Saute chicken in frying pan coated with cooking spray, then remove chicken. Saute garlic, celery and peppers 1 minute until limp, but crisp. Place chicken back in skillet. Combine wine and broth. Add to pan and simmer 15 minutes. Posted to MM-Recipes Digest by "Robert Ellis"
