Original recipe makes 4
1/2 cGround chicken gizzards
1 cnCream of mushroom soup
1/3 cCelery; chopped fine
Red and black pepper; to taste
1 cnOnion soup
1 cRaw rice
1/3 conions; Finely chopped
1 cParsley; minced
1 cgreen onion; tops, Chopped
1/3 cgreen bell pepper; Chopped
1/2 lbGround lean pork

Dirty Rice (Baked Rice Dressing) Preparation

Mix ground meat with the raw rice. Add onion, bell pepper, celery, onion tops and parsley. Mix the soups and season with red and black pepper. Put into a heavy casserole dish and cover with close-fitting cover in order to retain all the juice. Bake at 325 degrees for 2 hours. (Serves 4).
