This recipe will make you love your oven window.
Preheat oven to 400 F. While oven is preheating place 2 nine inch pie plates in oven with 1/2 tablespoon butter in each allow the butter to melt in the oven and keep pie plates in the oven until the batter is ready.
Place eggs in blender and blend until they are frothy and lemon yellow, add flour, milk, salt, 1 tablespoon butter and baking powder, blend until well mixed. Retrieve the pie plates from oven and pour 1/2 of batter into each.
Bake at 400 F for 10 minutes, turn oven down to 350 F and bake for an additional 5 minutes. Plate immediately with butter, lemon wedges and powdered sugar to taste.
