Cook rice with the water, peanut oil and salt. Cool. (you can cook the day before and keep refridgerated; fries best when cold)
Add the peanut oil, rice and green onions to a stir fry pan. Fry for 5 minutes over medium heat. Turn heat down to medium low, add egg and cook for 3 minutes. Add soy sauce and mix well.
