Simple scallop recipe, great taste.
I cook 5 scallops per person, it is usually 10 sea scallops for 1 pound.
Do not rinse the scallops - remove the muscle from the side of the scallop and set on a paper towel. Pat both sides of the scallop with the paper towel. Put salt and pepper on the scallops.
Use grapeseed oil to cook the scallops. Grapeseed oil can be used at high temperatures and it does not have a strong flavor so it is perfect for cooking scallops. Get the oil very hot and put the scallops in, don't move them around in the pan and you will get nice color in about 2 minutes per side.
