Moist, almost cakelike Southern cornbread.
Preheat oven to 450°F
Place a well-seasoned 10-inch cast-iron skillet in the oven to preheat.
In a medium mixing bowl, combine the cornmeal mix, creamed corn, sour cream, oil and eggs. Mix well.
Remove skillet from oven and spray lightly with cooking spray. Pour batter into skillet. Sprinkle top with black pepper if desired. Sprinkle lightly with kosher salt if desired (adds a bit of bite to the crust).
Place on middle rack of oven and bake until lightly brown, about 30 minutes.
Using skillet corn (I use Glory brand - http://www.gloryfoods.com/products/seasoned-string-beans-and-other-vegetables/skillet-corn/) will produce a slightly drier bread with whole kernels of corn...very tasty!)
