| 10 lgFlour tortillas; (up to 12) |
| 1 cnTomatoes and green chilies |
| 1 lgOnion; diced |
| 2 cnChili with beans or homemade |
Easy Enchiladas Preparation
http://www.EBICom.Net/~howle/ Brown meat. Add rest and simmer about 1 hr. until thick Enchilada Sauce: saute 1/4 cup very finely chopped onion in 2 Tbsp oil. Add 1 can enchilada sauce, 1 can tomato paste, 2 - 3 cans water, 1/4 tsp. each oregano and cumin, 1 or 2 Tbsp chili powder, dash of garlic powder. Simmer until filling is done. Place 1/3 cup filling along with some grated cheese and chopped onion in each tortilla. Roll up. Place with seam down in large greased baking pan. When all are rolled and placed in pan, top with sauce, remaining onions and cheese, and bake in 350 degree oven for 20 minutes. Serve with a dollop of sour cream, lettuce, tomatoes, etc. Posted to recipelu-digest by LSHW
