Remove sausage from casing and crumble. Combine sausage, beef, onion, and garlic in a large skillet. Brown all of this and drain well. Add tomato sauce and the remaining ingredients. Bring to a boil, reduce heat to a simmer, cover and stir occasionally.
Cook manicotti shells as directed. Combine cream cheese and remaining filling ingredients in a large mixing bowl. Mix well until blended. Stuff mixture into each cooked shell. Stuff from each end so that you do not tear the pasta.
Spoon half of the sauce into a lightly greased larger casserole dish. Place stuffed shells on top of the sauce. Place rest of the sauce on top of the past in the dish. Bake at 350 for 30-40 minutes or until bubbly.
