A rustic French country dessert
Heat oven to 350. Butter a 9 inch cake or pie pan.
Peel pears and cut in half. Remove core and any fibers and cut into 1/4" slices.
Put the slices in the prepared pan.
Sprinkle slices with eau de vie and toss to coat. Spread evenly in a layer.
Whisk eggs and sugar in a large bowl until lightly frothy and the sugar is dissolved. Sprinke or sift in the flour and nutmeg and add vanilla. Whisk until smooth. Gradually add cream and milk, whisking just until smooth. Melt 2 Tbs of the butter and stir it into the batter. Pour the batter over the fruit, sprinkle almonds on top, and dot the surface with bits of the remaining 1 T butter.
Bake until evenly puffed and brown and a skewer comes out clean, about 40 min.
Serve warm
Don't over-mix the batter. Clafoutis works with many fruits but adapt the batter to the fruit - Rich creamy batter for acidic fruit (like pineapple), lighter batter for sweeter fruits (pears, figs). French cooks add a liquor to complement the fruit (Poire William-pear; Armagnac - prunes, Calvados-apples, rum- pineapple), and add seasoning to the batter like cinnamon, nutmeg, cardamom, vanilla.
