Heat 1 tablespoon of the oil in a large non-stick frying pan. Add the sausage and fry for 6-8 minutes, until crisp, brown and cooked through.
Gently toss the avocado, salad greens, tomatoes, sausage and dressing. Serve immediately. Optional: Top with croutons.
Mix thoroughly the remaining olive oil, balsamic vinegar, sugar, and season with salt and pepper to form dressing.
I often crumble the chorizo rather than slice it and cube the avocado to make a little of everything in most bites. It's delicious both ways!
