Suggest a better description1. Combine flour and xanthan gum (if needed). Add the eggs and 2 tablespoons of water to the flour mixture and beat together to combine.
2. Knead the dough until it is smooth and no longer extremely sticky. Add more water or flour to get it to the right consistency.
3. Flour the counter top and the dough and roll to the thickness of 1/8 inch. Flour as needed to keep from sticking.
4. Fill it with whatever you want and use egg wash to seal them shut.
This recipe can be used for dumplings, wontons, eggrolls, or just plain fried. Basically whatever you want.
