Chicken Fried Steak
Pound meat to tenderize. Place in large bowl. Cover with water. Mix in salt and vinegar. Marinate 2 hours. Drain but do not pat dry. Combine flour and pepper in plastic bag. Add meat one piece at a time, shaking to coat. Heat a small amount of oil in deep large skillet over medium high heat. Add meat in batches. Do not crowd. Fry until light brown. Add more oil to skillet when necessary. Drain on paper towels. Place meat on warm platter. Cover with tent made of foil.
