This is a quick and easy dish. Great for when you want a light but satisfying meal. This can be made in a pot or in the slow cooker.
In a large pot, crock pot, or cast iron pot, add chicken and vegetable stock & turn heat to medium high. Add taco seasoning, white chili mix, chili powder, cumin. Add southwestern corn, diced tomatoes, salsa, chopped onion, chicken and black beans. Cook on low/medium heat in pot. If using crock pot cook on high. Allow to cook for 30 minutes to an hour.
Garnish with tortilla chip salad topper & cheese.
