Suggest a better description1. In a large bowl, place the four, xanthan gum, yeast and sugar, and whisk well with a handheld whisk. Add the salt and whisk again.
2. To the flour mixture, add the 2 T of olive oil and the water in a steady stream, mixing with a spoon or fork as you add the liquid until the mixture begins to come together. If the dough seems super sticky, add some more flour by the tablespoon, and stir to incorporate. Press the dough into a disk with well-floured hands.
3. Place the dough in another medium bowl and drizzle it lightly with no more than 1 T of olive oil. Turn the dough to coat it with olive oil which will prevent a crust from forming as it rises. Cover the bowl tightlly with plastic wrap.
