Dice vegetables in about 1/2 in cubes, so they will cook evenly. Cook all the vegetables in olive oil until soft. Let cool for about 10 minutes.
Roll out puff pastry about an inch more than its original size.
Mix meat and vegetables together, season, add of the egg.
Line meat on the longest side of dough about 3/4 in from the edge.
Life the edge of the dough and wrap/roll meat to the other end until completely covered. Twist and tuck the end under.
Place on baking sheet. Brush remaining egg on top. Cook for 1 hour until golden brown.
