Bring the water to a boil then add Vinegar
Add washed shisho and boil for 5 minutes
The water has become bright purple. Turn off heat and strain out leaves, keeping the liquid
Dissolve honey in the hot liquid
Heat again, and bring back to a boil
Dissolve sugar and boil for 20-30 minutes
Put the final concentrated juice in a jar or container for storage in the fridge,
Traditionally it is drank diluted with 2 parts water or ice to 1 part shiso juice.
