Bill's favorite lamb shank recipe
Flour and brown shanks in olive oil and remove from pan. Saute vegetables - salt and pepper to taste. Add shanks back to pan. Mix tomato sauce and beef broth (about 1/3 tomato to 2/3 beef broth) and pour into pan -should come 1/3 to 1/2 up the shanks to braise them. Add chopped fresh thyme.
Braise in oven at 325 degrees until falling off the bone - about one hour.
