1/2 cfresh mint; Coarsely-chopped
2 Garlic
2 cPlum tomatoes; peeled
1 cscallions; Chopped
1 clettuce; Coarsely-chopped
1/4 clemon juice; Freshly-squeezed
1 1/2 tsGround sumac; (available in specialty stores)
3/4 cflat-leaf parsley; Chopped
1/3 cExtra-Virgin Olive Oil
1 Green bell pepper; 1/4-inch
1 cCucumber; peeled, seeded and
Salt and pepper
2 ctoasted pita; Crumbled

Fattoush (Middle Eastern Bread Salad) Preparation

In a large salad bowl combine pepper, cucumber, scallions, herbs and lettuce. Crush garlic and chop it with 1/2 teaspoon salt to a paste. Combine in a small bowl with lemon juice, olive oil, sumac an d pepper. Whisk lemon dressing into salad ingredients, toss to mix, cover and refrigerate at least 1 hour and up to 3.
