These are YUMMY! They are soft but have a little crisp on the edges. The "imitation honey" is maltitol syrup. You are not going to want to eat a lot of maltitol syrup because it can make you gassy. But the good news is that it doesn't use very much and these cookies are very filling! Makes 1 dozen cookies.
1. Preheat oven to 350°F.
2. In a medium bowl, whisk together the almond meal, salt, and baking soda. Then add the butter, imitation honey, molasses, egg, and vanilla. Mix well.
3. Fold in the chocolate chunks, then drop by rounded tablespoons onto a baking sheet lined with parchment paper.
4. Bake at 350°F for 9 minutes, until the edges are golden brown.
5. Allow to cool on the pan for 10 minutes, then serve warm or allow to cool to room temperature.
