Quick and easy gourmet chicken dish easily increased.
Pre heat oven to 350. Put 2 tablespoons of EVOO in a cast iron skillet . Sauté the onion, garlic and mushrooms in 2 tablespoon of mEVOO. Push aside and brown chicken breasts that have bee rubbed with sea salt and fresh ground pepper just until browned on each side. Put mushroom mixture around the chicken breasts. Roast in oven for 15 minutes. Remove from skillet and put 1/4 cup water plus juice of 1/2 Lemmon in skillet. Cook and stir to make a sauce. You can add a little flour and chicken broth to thicken then pour over the chicken breast and mushrooms to serve
