Malt vinegar; (optional)
Salt to taste
Vegetable oil
BEER BATTER
1/2 largewhite onion; Minced
1 1/2 lbCod fillets
1/2 cFlour
Black Pepper; to taste
1 tsPaprika
6 mdPotatoes
Cayenne pepper
1/3 cFresh Lemon Juice

Fish and Chips in Beer Batter Preparation

Cut fish into serving pieces & place in flat bowl. Sprinkle fish with lemon juice, onion, salt & pepper to taste, marinate 1 hour. Wash & peel potatoes; cut into strips & rinse in cold water: drain well. Fry potatoes in deep oil heated to 375 until nearly tender; drain & spread on paper towels. Sift together flour, 1 tsp. salt, pepper & cayenne to taste into flat dish; dust fish in flour. Dip fish into beer batter & fry until golden brown & crisp. Refry potatoes until golden brown: drain.
