Suggest a better descriptionSift flour into a bowl & make a well in the middle. Beat egg yolks with a little of the milk, salt & tablespoon of sugar & pour into the well. Starting from the middle, blend the yolk mixture & the flour. Gradually add milk, taking care to avoid lumps. Whisk egg whites until stiff; carefully fold into flour mixture. Heat butter in frying pan & pour in about 3/8 inch of the batter. Fry until underside is light yellow. Tear into small pieces with two forks. Brown the pieces well, turning frequently.
