Suggest a better descriptionIn a heavy 4 or 5 quart kettle heat oil over moderate heat until a deep-fat thermometer registers 325 degrees. Line a shallow baking pan with paper towels. Cut potatoes lengthwise into 1/2-inch thick sticks. Cook potatoes in oil 2 minutes and with a slotted spoon transfer to paper towels to drain. Heat oil until it registers 350 degrees on a deep-fat thermometer. Return potatoes to oil and cook until golden, about 5 minutes. Transfer fries with slotted spoon to paper towels to drain and toss fries in a large bowl with salt and pepper.
