French Lamb Stew

| 1 1/2 tsSalt |
| 1 Garlic; minced |
| 1 1/2 cStock (vegetable); (vegetable, chicken ) |
| 6 smWhite onions; (up to 8) |
| 1/4 tsMarjoram |
| 3 tbOlive oil; or salad oil |
| 2 tbFlour |
| 2 lbLean stewing lamb; cut |
| 1 mdOnion; chopped |
| 1/8 tsPepper |
| 3 Carrots; scraped and sliced |
| 12 tbparsley; Finely chopped |
| 1 Bay leaf; crumbled |
| 2 tbLemon juice; (or 1/2 c. dry) |
| 3 mdPotatoes; cut in pieces |
French Lamb Stew Preparation
Heat oil in heavy 4 qt. kettle Brown meat on all sides. Remove and saute onion and garlic. Return meat and sprinkle with flour. Add broth and seasoning. Mix swell. Cover and simmer 1/2 ho7ur. Add white onions and simmer 15 minutes. Add carrots and potatoes. Simmer 20 minutes until just fork tender. Add parsley and serve with French bread and a salad...delicious!
