Fresh Cranberry Sauce Preparation
Notes: From Hawaiian Electric Kitchen. Rinse cranberries, discarding over ripe berries. In a large saucepan, combine cranberries, water, and orange juice. Cover and bring to a boil; lower heat and cook for 7 to 10 minutes. Strain mixture through fine mesh strainer. Return pulp to pan; discard skins and seeds. Add sugar and simmer for 5 to 10 minutes. Add liquor and continue cooking for 2 to 3 more minutes. Makes about 2 cups. Posted to recipelu-digest by ncanty@juno.com (Nadia I Canty) on Mar 25, 1998
